RAMNISTA (2015)

Varieties: Xinomavro 100% (old vines)
Ageing: 10-15 years

From selected vineyard blocks within the private vineyards of Kir-Yiannis winery in Yiannakohori, Naousa, North Greece. The vineyards used for Ramnista have an overall southeast exposure at an altitude of 280-330 m. For “Ramnista” grapes mostly from the vineyard blocks in the lower pH range are used and with lighter soil types to maximize the aromatic intensity and complexity. Moreover most of these blocks are closest to the nearby forest, where the more humid mesoclimate leads to a more tempered ripening pace.

The grapes are handpicked and sorted on a conveyor belt before crush. The final blend is made five months after harvest and the last racking takes place about six months later. 18 months in French and American oak casks plus further ageing in bottle for another 6 months.

Food Pairing: Rare aromatic complexity with intense tannin structure and robust acidity. An excellent pair for red meat and game.

We would suggest:

Mosharisia (10oz. Sirloin steak)

Tender sirloin steak (300 γρ.) cooked as you like and finished with fresh herbs aromatic butter.

Stuffed pork tenderloin

Cooked in local red wine sauce with plums and stuffed with Talagani cheese. Served on mash potato and grilled vegetables.

OVILOS red

Varieties: Cabernet Sauvignon
Ageing: In new French oak barrels for 16 months, then allowed to mature in bottles for 24 months.

The Ovilos Red is derived from the Cabernet Sauvignon varietal, specifically from the estate’s first vineyard planted in the foothills of Mt Pangeon. It is a wine with a long ageing process, produced from extended maceration of grapes and ageing in new French oak barrels for 16 months. It is then allowed to mature in bottles for 24 months.

It has a deep ruby-red colour with exquisite aromas of raspberry marmalade, red fruit and violet in harmony with cedar, smoke and milk chocolate for a skilful blend. It has a full-bodied, rich flavour with impressive structure and an artful balance between its acidity and generous tannins.

With a long finish, it reaches its peak elegance after a few years. It can be cellared for at least 15 years and is served at 16-18°C.

We would suggest:

Lamb with Gruyere cheese, in foil

Slow roasted fresh lamb with Cretan Gruyere, tomatoes, fresh herbs and potatoes.

Aged Ribeye Steak

Home dry aged Ribeye 300 gr., full of flavour and very tender.

Varieties: A luscious blend of three Greek indigenous red varieties: Limnio, Mavroudi and Mavrotragano.

Limnio, mentioned by comic dramatist Aristophanes as "Limnia ampelos" in the 5th century BC (vine from the Greek island Limnos), is the oldest attested Greek grape variety and predominates in this blend.

Following extraction and completion of alcoholic and malolactic fermentation in special oak tanks from Burgundy, the wine matures in French oak barrels.

It has a brilliant, deep-red colour and a complex bouquet of ripe dark fruits (raspberries), raisins, coffee and cacao. On the palate, gentle tannins are supported by an abundance of fruit, creating power and balance. The aftertaste continues with a repetition of the spices. Excellent ageing potential.

Food Pairing: Red meat stews in spicy sauces, game.

Varieties: 85% Assyrtiko, 15% Aidani
Ageing: 3 years in oak barrels

Naturally sweet white wine from sun dried grapes. The grapes are spread on terraces under the sun for 6 – 8 days before pressing, then fermentated in stainless steel tanks.
This classic dessert wine bears a deep orange-red color with brown tints. The nose is complex, ranging from sweet spices like cinnamon and cloves towards dried fruits such as apricots and raisins. Prolonged maturation of three years in oak barrels, delivers a mellow, velvety character, while balances the kicking acidity and reveals notes of honey and lemon. Long ageing potential.

Food Pairing: Alone as an aperitif or enjoy with light desserts made of cream with dried nuts or sweet spices.

We would suggest:

Cake salad

Green salad with caramelized nuts, fresh tomato chutney and balsamic syrup.


Politiko

Traditional syrupy cake base topped with fresh cream made of fresh milk and farm fresh eggs. Dusted with cinnamon.
